With the development of material science, there are more and more types of POTS in the kitchen. According to the materials, they can be divided into iron POTS, aluminum POTS, stainless steel POTS, titanium POTS and so on. Of all these metal POTS, which one has the stronger overall performance and is more suitable for everyday use.
1)The weight of the pot
Generally speaking, the weight of aluminum pot and titanium pot is far lighter than that of iron pot and stainless steel pot, which is lighter than that of titanium pot under the same volume. Titanium has a density of 4.506-4.516 grams per cubic centimeter (20 ° C), which is higher than aluminum and lower than iron, copper, and nickel. For women with less strength, aluminum and titanium POTS are easier to master, even picking up the pot to stir fry is perfectly OK.
2) Corrosion resistance of the pot
As we all know, ordinary iron pot is easy to rust and corrosion, in order to prevent rust some manufacturers will be coated on the iron pot. Titanium pot, aluminum pot, stainless steel pot can react with oxygen in the air, forming a dense oxide film on the surface of the pot body, to prevent the liquid in the pot from eroding the surface of the pot. In addition, titanium corrosion resistance is very good, even if seawater, aqua regia and chlorine and other highly corrosive liquids and gases, it is difficult to erode it, whether it is aluminum, iron or stainless steel are difficult to do
3) Heat resistance of the pot
Heat resistance refers to the metal can still maintain its excellent physical and mechanical properties at high temperature, in this point titanium and stainless steel pot performance is superior. For example, although the melting point of iron is 1538℃, it is easy to undergo a violent oxidation reaction with oxygen after heating, resulting in the formation of iron oxides. Aluminum is a kind of active metal, has certain heat resistance, but the melting point of aluminum is only 660℃, it is easy to soften at high temperature. The melting point of titanium is 1668±4℃, and its chemical properties are stable within 500℃. 304 and other high quality stainless steel contains nickel, chromium and other metals, high temperature resistance 800℃.
4)Heat conduction of the pot
For cooking pot, thermal conductivity is also a very important index. The thermal conductivity of aluminum is 237 W/mK, iron is 80 W/mK, titanium is 14.63W/mK, stainless steel is 17W/mK, the higher the value, the better the thermal conductivity. Although the thermal conductivity of titanium metal is lower than that of aluminum and iron, due to the excellent corrosion resistance of titanium, the wall thickness of the pot can be greatly reduced, and the heat transfer mode between the surface and steam is drip condensation, which reduces the thermal resistance, and the surface of titanium without scaling can also reduce the thermal resistance, so that the thermal conductivity of titanium is significantly improved.
5)The health and safety of the pot
Although kitchen POTS and pans can resist corrosion and high temperature, but the time used for a long time will inevitably precipitate metal. Aluminum pot used for a long time also exists the risk of aluminum precipitation, aluminum can damage human brain cells, so the risk is greater. Stainless steel contains nickel, chromium and other heavy metal elements, if there is metal precipitation may cause chronic poisoning.
